? INGREDIENTS
- 1 chicken weighing 1,200kg
- 1/2 lemon
- 3 cloves of garlic
- 60gr of traditional chorizo
- 1 tablespoon of lard
- 1 tablespoon margarine
- 1 sprig of parsley
- 1 tablespoon of pepper mustard
- 2dl of white wine
- Salt to taste
- Pepper to taste
- 1 small chilli pepper
- 1 leek
- 1 kg new potatoes
- Olive oil to taste
? PREPARATION
- Open the chicken from the breast side, spread it out, wash and dry it.
- Then rub it with half the lemon.
- Pass the chorizo, parsley, chilli and garlic cloves through the 1 2 3.
- Mix the mixture well with the margarine, lard, paprika, a little salt if necessary and pepper.
- Spread all over the chicken and leave to marinate for 3 hours.
- In the meantime, peel the potatoes, wash them and put them in a bowl and season them with a little salt, pepper, paprika and a drizzle of olive oil.
- Place the chicken on a baking tray with the opening downwards, the potatoes around it and the sliced leek, drizzle with white wine and place in the hot oven to roast.
- Drizzle the chicken with its own sauce from time to time.
- Take it out of the oven once it's baked and golden brown.
- Serve with a mixed salad dressed with olive oil and vinegar.
