{"id":15630,"date":"2023-04-11T09:59:22","date_gmt":"2023-04-11T08:59:22","guid":{"rendered":"https:\/\/despensafranciscana.com\/?p=15630"},"modified":"2023-05-23T14:42:59","modified_gmt":"2023-05-23T13:42:59","slug":"cerveja-artesanal-alentejana","status":"publish","type":"post","link":"https:\/\/despensafranciscana.com\/fr\/2023\/04\/11\/cerveja-artesanal-alentejana\/","title":{"rendered":"BI\u00c8RE ARTISANALE DE L'ALENTEJO"},"content":{"rendered":"<p>Qui a dit qu'on ne buvait que du bon vin dans l'Alentejo ?<\/p>\n\n\n\n<p>Lu\u00eds Ramos, un Portalegrense originaire de l'Alentejo, affirme avec beaucoup de conviction que l'on peut \u00e9galement boire de la bonne bi\u00e8re artisanale dans cette r\u00e9gion.<\/p>\n\n\n\n<p>Despensa Franciscana s'est rendue dans le village de Fortios pour en savoir plus sur le projet de Lu\u00eds, appel\u00e9 Casa do Penedo Brewery, et a pu constater que d'excellentes bi\u00e8res artisanales y sont d\u00e9j\u00e0 fabriqu\u00e9es.<\/p>\n\n\n\n<p>Le mentor de la Casa do Penedo, qui n'a jamais abandonn\u00e9 ses racines alentejanes et a toujours \u00e9tudi\u00e9 \u00e0 Portalegre, est titulaire d'un master en soins infirmiers et s'est sp\u00e9cialis\u00e9 dans les soins m\u00e9dico-chirurgicaux. \u00c0 l'\u00e2ge de 27 ans, il a commenc\u00e9 \u00e0 travailler \u00e0 Santa Casa Marv\u00e3o, a travaill\u00e9 \u00e0 l'unit\u00e9 de soins de longue dur\u00e9e de Beir\u00e3 et travaille actuellement \u00e0 l'h\u00f4pital de Portalegre.<\/p>\n\n\n\n<p>Curieux, il a commenc\u00e9 \u00e0 \u00e9tudier les processus de fermentation et a m\u00eame envisag\u00e9 de produire du vin, mais il s'est vite rendu compte qu'il devait se concentrer sur la bi\u00e8re. Il a commenc\u00e9 \u00e0 brasser de la bi\u00e8re dans des seaux en plastique, \u00e0 l'aide d'un kit qu'il avait achet\u00e9, et c'est ainsi que sa premi\u00e8re production a d\u00e9but\u00e9.<\/p>\n\n\n\n<p>Lu\u00eds disait aussi que les grandes id\u00e9es naissent dans les moments les plus difficiles !<\/p>\n\n\n\n<p>C'est ce qui s'est pass\u00e9 avec Casa do Penedo... dans un environnement pand\u00e9mique, o\u00f9 la cr\u00e9ativit\u00e9 a pr\u00e9valu comme solution pour d\u00e9compresser, la premi\u00e8re bi\u00e8re est n\u00e9e et le processus a \u00e9t\u00e9 si passionn\u00e9 qu'il a fini par l\u00e9galiser le projet pour rendre l'entreprise plus s\u00e9rieuse.<\/p>\n\n\n\n<p>Il a rapidement franchi le pas et particip\u00e9 \u00e0 quelques concours nationaux o\u00f9, en novembre 2021, il a remport\u00e9 la deuxi\u00e8me place du concours national de la bi\u00e8re artisanale dans la cat\u00e9gorie exceptionnelle. D\u00e8s lors, il franchit le pas et produit une plus grande quantit\u00e9 de litres et, aujourd'hui, il est d\u00e9j\u00e0 une r\u00e9f\u00e9rence dans le haut Alentejo.<\/p>\n\n\n\n<p>Elle se d\u00e9veloppe \u00e9galement au niveau national et poss\u00e8de sa propre usine \u00e0 Fortios, o\u00f9 elle travaille parall\u00e8lement \u00e0 son activit\u00e9 hospitali\u00e8re.<\/p>\n\n\n\n<p>Lu\u00eds a d\u00e9clar\u00e9 qu'il avait une grande source d'inspiration, qu'il aime toujours mentionner, \u00e0 savoir ses coll\u00e8gues brasseurs de la bi\u00e8re Barona \u00e0 Castelo de Vide.<\/p>\n\n\n\n<p>Elle compte actuellement 10 r\u00e9f\u00e9rences de bi\u00e8res et la onzi\u00e8me sera bient\u00f4t brass\u00e9e. Toutes les bouteilles comportent une illustration correspondant au style de la bi\u00e8re, r\u00e9alis\u00e9e par Paulo Belo Costa, illustrateur \u00e0 Castelo de Vide.<\/p>\n\n\n\n<p>Comme projets futurs, il d\u00e9veloppe deux bi\u00e8res artisanales \u00e0 faible teneur en alcool, suivant une tendance des magazines sp\u00e9cialis\u00e9s am\u00e9ricains. Lu\u00eds travaille seul sur ce projet et veut continuer \u00e0 garantir la qualit\u00e9 qu'il a vue jusqu'\u00e0 pr\u00e9sent, car il y a des secrets qui font partie de l'entreprise !<\/p>\n\n\n\n<hr
