{"id":2699,"date":"2021-12-02T10:03:44","date_gmt":"2021-12-02T10:03:44","guid":{"rendered":"https:\/\/despensafranciscana.com\/?p=2699"},"modified":"2025-03-05T09:54:31","modified_gmt":"2025-03-05T09:54:31","slug":"azevias-de-natal","status":"publish","type":"post","link":"https:\/\/despensafranciscana.com\/de\/2021\/12\/02\/azevias-de-natal\/","title":{"rendered":"Weihnachts-Sauerklee"},"content":{"rendered":"<p>Im Alentejo ist Weihnachten gleichbedeutend mit Azevias, und so bringen wir Ihnen das Rezept mit freundlicher Genehmigung von Eurico Luz! <\/p>\n\n\n\n<p><strong>ZUTATEN:<\/strong><\/p>\n\n\n\n<p><strong>F\u00fcr die Nudeln:&nbsp;<\/strong><\/p>\n\n\n\n<p>500 g Mehl&nbsp;<\/p>\n\n\n\n<p>3 bis 4 Essl\u00f6ffel Fett (eine Mischung aus Schmalz und Butter oder Margarine)&nbsp;<\/p>\n\n\n\n<p>1 Glas Weinbrand&nbsp;<\/p>\n\n\n\n<p>Salz&nbsp;<\/p>\n\n\n\n<p>F\u00fcr die Kichererbsenf\u00fcllung:&nbsp;<\/p>\n\n\n\n<p>1 kg Getreide&nbsp;<\/p>\n\n\n\n<p>750 g Zucker&nbsp;<\/p>\n\n\n\n<p>2 Zitronen&nbsp;<\/p>\n\n\n\n<p>1 Dessertl\u00f6ffel Zimtpulver&nbsp;<\/p>\n\n\n\n<p>3 Eigelb&nbsp;<\/p>\n\n\n\n<p><strong>VORBEREITUNG:&nbsp;<\/strong><\/p>\n\n\n\n<p>Die Kichererbsen mit einer Prise Salz kochen, p\u00fcrieren und durch ein feines Sieb streichen. Den Zucker mit 2 dl Wasser zum Kochen bringen und 1 bis 2 Minuten kochen lassen.&nbsp;<\/p>\n\n\n\n<p>Die p\u00fcrierten Kichererbsen, den Zimt und die Zitronenschale hinzuf\u00fcgen. Die Mischung zum Kochen bringen und dabei so lange r\u00fchren, bis man den Boden der Pfanne sieht. Herausnehmen, die Eigelbe hinzuf\u00fcgen und die Mischung erneut zum Kochen bringen, damit die Eigelbe zusammenkleben. \u00dcber Nacht stehen lassen. Das Mehl in eine Sch\u00fcssel sieben und in die Mitte eine Vertiefung machen, in die das hei\u00dfe Fett gegossen wird.&nbsp;<\/p>\n\n\n\n<p>Zusammenmischen. Den Weinbrand hinzuf\u00fcgen und dann kneten, dabei einige Tropfen warmes Wasser mit Salz hinzuf\u00fcgen. Den Teig gut durchkneten und an einem temperierten Ort ruhen lassen.
